Rooted in Martina Caruso’s Aeolian heritage, this recipe brings together the Sicilian flavours that shape her cooking: tomato, aubergine, almonds, baked ricotta, anchovies and capers, with the crisp, airy texture of Pinsa, creating a meeting point between Rome and the Aeolian Islands.

TRUFFLE

This recipe reflects Martina’s personal approach to contrasts through a recurring dialogue between land and sea. Black truffle and chicken broth meet prawns and preserved lemon in a refined, contemporary expression of her cuisine, where depth and elegance come together in a signature interpretation of Pinsa.

VEGETALE

A fresh, plant-forward Mediterranean interpretation that celebrates the power of simple, high-quality ingredients, with hummus, confit cherry tomatoes and caper leaves at its heart, showing how simplicity can still deliver character, balance and distinctive flavour.

Caruso will also take to the event’s pizza stage for a 20-minute slot where she will discuss the history behind Pinsa, her personal approach to working with it and why the product works not only in casual dining but also in a more refined restaurant context. She will also demonstrate and prepare one of her Pinsa recipes on stage whilst delivering her talk to the audience.
